White Sturgeon (Acipenser Transmontanus) caviar name: White/American

The white sturgeon reaches on average 2.10 m in length. The largest caught white sturgeon was 6.10 m and weighed in at 816 kg. This species spends most of its time at the bottom or slow flowing rivers, bays and estuarine areas. However, during spawning season, it moves to the river mouth and wanders upwards to lay its eggs.
