Farmed Sturgeon (White sturgeon)

The sturgeon is a bone fish of the oldest genus of the still living fish. It lives in the Caspian Sea and in various European rivers.  Almost twenty sturgeon species are known.  This sturgeon, bred in Italy, is an active contribution to the conservation of the wild sturgeon. The boneless meat of the sturgeon impresses with its consistency and its crunchy unmistakable flavour.  Smoked in a traditional way and sliced very thinly, this low fat fish meat is the highlight of every cold buffet.
